Hello I’m Koji. Yes, my real name “Koji” might sound familiar to you if you know the four major ingredients to make sake. An ingredient is called “koji” or “koji-mold,” and it makes sugar out of the starch of the rice. like one of the sake ingredients, “koji.” I am a professional sake communicator with a sake sommelier certification(SSI). I am 100% committed to international sake matters, translation and interpretation, brewery tour guide, and educational course.
